Orecchiette pasta with brocoli rabe & pork

12 oz pasta orecchiette

12 oz brocoli, chopped

12 oz pork sausage meat

garlic, thickly sliced

chile peppers, crushed

anchovy fillets

breadcrumbs

extra virgin olive oil

salt

Pecorino or Parmagiano cheese

Immerse the brocoli into boiling water for 10 minutes

After 10 minutes add the pasta to the same water and cook for an additional 10 minutes, or until pasta texture is to your taste.

Drain well and keep warm

Seperately In a large enough frying pan to finish the dish and to serve from, fry up the sausage in some olive oil and break up the pieces until done

Add additional olive oil and, when hot, flavor the oil with garlic, peppers, anchovies, and bread crumbs. Note: This is your pasta sauce so add as much of these ingredients, including the olive oil, as you feel comfortable with.

When garlic is golden, add the pasta and brocoli

Serve with Pecorino or Parmiagano
